Slap fish or conch between two buns for a quick Bahamian lunch

Burgers are classic lunchtime favorites, especially for a beach barbecue. The burger options on a Bahamian menu extend well beyond beef. Seafood is the star of the Bahamian burger: conch and fish in particular. Conch is usually battered and deep fried before being stuffed between the buns, but some menus like the one at Chat 'N Chill in Exuma, serve homemade conch patties with minced conch that is grilled fresh. If you love spicy coleslaw, the beach bar recommends you spread their signature slaw on the burger too. Fish burgers, on the other hand, are either fried or grilled: mahi-mahi and grouper are the usual choices.
